The elements of a compliant kitchen
- Extract canopy with correct capture velocity and accessible grease filters
- Make-up air supply balanced against extract volume
- Interlock control panel proving extract and input air
- Gas pressure proving where appliance taps are accessible to staff
- Normally closed solenoid valve on the catering gas line
- Emergency gas shut-off buttons on escape routes
- Gas detection and CO detection where flueing or layout requires it
CP42 and compliance records
The CP42 is the commercial catering inspection record. Alongside it keep the interlock commissioning certificate, ventilation air volume readings, detection calibration certificates and a maintenance log for filters and fans.

- Documented interlock functional test with trip times
- Ventilation air volumes measured and recorded
- Detection calibration certificates within 12 months
- Staff trained on start-up, e-stops and reset procedure
Who is responsible
The duty holder — usually the operator, landlord or facilities manager — must ensure the system is maintained and records are available. Schools, care homes and multi-site restaurant groups typically carry this in a planned maintenance contract.

What is a CP42?
The industry commercial catering gas inspection record, completed by a Gas Safe registered engineer and covering appliances, ventilation and the interlock system.
Can a kitchen trade with a failed interlock?
No. A defective interlock makes the installation at risk; the gas must be isolated until it is repaired and retested.
